Nourish & Noel Cheesecake



This Nourish & Noël Cheesecake is my idea of the perfect Christmas dessert — creamy, lightly spiced and festive, without leaving you feeling heavy or sluggish. It’s completely no-bake, naturally sweetened and made with real, nourishing ingredients, so you can enjoy it as part of your celebrations and still feel good afterwards.


Ingredients

Base

  • 1½ cups raw almonds or walnuts

  • 1 cup dates, pitted

  • 1 tbsp raw cacao powder (optional, for a deeper flavour)

  • Pinch of sea salt

Creamy Noël Filling

  • 2 cups raw cashews, soaked for 4 hours or overnight, then drained

  • ½ cup full-fat coconut cream

  • ¼ cup coconut oil, melted

  • ⅓ cup pure maple syrup (adjust to taste)

  • Juice of 1 lemon

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg

  • ¼ tsp ground ginger

  • Pinch of cloves

Festive Topping (optional)

  • Fresh raspberries or cherries

  • Pomegranate seeds

  • Orange zest

  • Crushed pistachios

Method

  1. Prepare the base. Add the nuts, dates, cacao (if using) and salt to a food processor. Blend until the mixture comes together and sticks when pressed between your fingers and firmly into the base of a lined springform tin. Place in the fridge to chill while you prepare the filling.

  2. Make the filling. Add all filling ingredients to a food processor. Blend until completely smooth and creamy, scraping down the sides as needed. Take your time here — the softer the filling, the more luxurious the cheesecake.

  3. Assemble. Pour the filling over the prepared base and smooth the top. Gently tap the tin on the bench to release any air bubbles.

  4. Set the place in the freezer for at least 4 hours, or until firm. Remove from the freezer 20–30 minutes before serving for a perfectly creamy texture.

  5. Decorate & serve. Just before serving, top with berries, pomegranate, orange zest and pistachios for a beautiful Noël finish.

Serving & Storage Tips

  • Stores well in the freezer for up to 2 weeks

  • Slice with a warm knife for clean edges

  • Best served slightly softened for maximum flavour and creaminess
