Why This Winter Shepherd's Pie Is Perfect for Cold Weather

During winter, our bodies naturally crave warm, satisfying meals. This healthy shepherd's pie provides:

  • High-quality protein for muscle health

  • Slow-release carbohydrates for sustained energy

  • Comforting flavours the whole family will love


Ingredients - For the Filling

  • 500g lean beef mince or lamb mince

  • 1 onion, finely diced

  • 2 cloves garlic, crushed

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 cup peas

  • 2 tbsp tomato paste

  • 1 cup beef stock or bone broth

  • 1 tsp rosemary

  • 1 tsp thyme

  • Sea salt and cracked pepper


For the Kumara Topping

  • 500g orange kumara

  • 500g potatoes

  • 2 tbsp butter

  • ¼ cup milk (Coconut/Almond milk for Dairy-free)

  • Salt and pepper


Method

Step 1: Prepare the Kumara Topping

  1. Peel and chop the kumara and potatoes into evenly sized chunks.

  2. Place in a large saucepan and cover with cold water.

  3. Bring to the boil and cook for 15–20 minutes, or until tender.

  4. Drain well, then mash with butter and milk until smooth and creamy.

  5. Season with salt and pepper to taste and set aside.

Step 2: Make the Filling

  1. Heat a drizzle of olive oil in a large frying pan over medium heat.

  2. Add the onion and garlic and cook for 2–3 minutes until softened.

  3. Add the mince and cook until browned, breaking it up with a wooden spoon.

  4. Stir in the carrots and celery and cook for a further 5 minutes.

  5. Add the tomato paste, stock, rosemary and thyme.

  6. Reduce the heat and simmer for 15 minutes until the mixture thickens.

  7. Stir through the peas and season with sea salt and cracked pepper.

Step 3: Assemble the Pie

  1. Preheat your oven to 180°C fan bake.

  2. Spoon the mince mixture into a large baking dish.

  3. Spread the kumara mash evenly over the top.

  4. Use a fork to create ridges on the surface for a golden, crispy finish.

Step 4: Bake

  1. Bake for 20–25 minutes or until the topping is golden brown.

  2. Remove from the oven and allow to rest for 5 minutes before serving.
