Ingredients

Stir-Fry

  • 500g organic beef mince

  • 200g rice noodles

  • 1 tbsp extra virgin olive oil

  • 1 large red onion, finely sliced

  • 4 fresh garlic cloves, crushed

  • 1 tbsp fresh ginger, grated

  • 3 cups kale, roughly chopped

  • 3 tbsp amino soy sauce or coconut aminos

  • 2 tbsp coconut sugar

  • ½ tsp chilli flakes (optional)

  • 2 tbsp water

To Garnish

  • 2 spring onions, finely sliced

  • 2 tbsp sesame seeds

  • Fresh leaf parsley, roughly chopped

  • 2 tbsp chopped peanuts (if desired)

Method

  1. Cook the rice noodles according to the packet instructions. Once cooked, drain and rinse under cold water to prevent them from sticking together. Set aside while you prepare the stir-fry.

  2. Heat the olive oil in a large frying pan or wok over medium-high heat. Add the sliced red onion and cook for 3–4 minutes until softened and fragrant. Stir in the crushed garlic and grated ginger and cook for a further minute, allowing the flavours to infuse through the oil.

  3. Add the organic beef mince to the pan and cook until browned, breaking it up with a wooden spoon as it cooks. Once the beef is cooked through, pour over the amino soy sauce and add the coconut sugar and chilli flakes. Stir well, then continue cooking for 1–2 minutes, until the sauce becomes glossy and lightly coats the beef.

  4. Add the chopped kale and water, stirring gently until the kale wilts and softens, retaining its vibrant green colour. This should take around 2–3 minutes.

  5. Add the cooked rice noodles to the pan and toss everything together until the noodles are evenly coated in the sticky beef mixture and heated through.

  6. Serve immediately, topped with sesame seeds, finely sliced spring onions, and a generous sprinkle of fresh parsley. For an extra burst of freshness, finish with a squeeze of fresh lime juice just before serving.
