Why These Snowman Bites Are Perfect for Kids

These bite-sized snowmen are made with a simple coconut-and-almond (or oat) base, topped with a fresh strawberry “Santa hat.” They’re cute, colourful and packed with nutrients that help keep kids energised throughout the day.


Ingredients

  • 1 cup desiccated coconut

  • ½ cup almond meal (or oat flour for a nut-free version)

  • 2–3 tbsp honey or maple syrup

  • 1 tbsp melted coconut oil

  • 1 tsp vanilla

  • Fresh strawberries

  • Mini chocolate chips or sultanas (for eyes)

  • Tiny pretzel sticks or toothpicks (for assembling)


1. Roll the Snowballs

Mix coconut, almond meal, honey, melted coconut oil and vanilla in a bowl. Roll into small balls and refrigerate for 20 minutes to set.


2. Create the Hats

Slice the tops off the strawberries so they sit flat.


3. Assemble the Snowmen

Place a cooled coconut ball at the bottom, top with a strawberry hat, and secure with a tiny pretzel stick or toothpick. Add chocolate chip or sultana eyes and a smile.


4. Add Coconut Snow

Dust lightly with extra coconut for a snowy finish.
