These bite-sized snowmen are made with a simple coconut-and-almond (or oat) base, topped with a fresh strawberry “Santa hat.” They’re cute, colourful and packed with nutrients that help keep kids energised throughout the day.
Ingredients
1 cup desiccated coconut
½ cup almond meal (or oat flour for a nut-free version)
2–3 tbsp honey or maple syrup
1 tbsp melted coconut oil
1 tsp vanilla
Fresh strawberries
Mini chocolate chips or sultanas (for eyes)
Tiny pretzel sticks or toothpicks (for assembling)
1. Roll the Snowballs
Mix coconut, almond meal, honey, melted coconut oil and vanilla in a bowl. Roll into small balls and refrigerate for 20 minutes to set.
2. Create the Hats
Slice the tops off the strawberries so they sit flat.
3. Assemble the Snowmen
Place a cooled coconut ball at the bottom, top with a strawberry hat, and secure with a tiny pretzel stick or toothpick. Add chocolate chip or sultana eyes and a smile.
4. Add Coconut Snow
Dust lightly with extra coconut for a snowy finish.
